Monterrey Restauranted Mexicano, 199 Knox Abbott Drive: October 2014 (moving) 10 comments
A new apartment complex is coming to a premier setting on Cayce’s riverfront.
Plans for a complex of about 230 units near the Blossom Street bridge have received initial approval from Cayce City Council.
The site provides a prime view both of the Congaree River and the skyline of downtown Columbia to the east.
The project would extend along Knox Abbott Drive from Axtell Drive to the city’s Riverwalk, replacing Monterrey Mexican Restaurant and the Riverside Inn, which are across the street from Guignard Park.
Monterrey Knox Abbott are now closed and are working on their new location in the old Zeus Pizza location in Parkland Plaza (not Parklane Plaza). I believe this location started as a Denny's, though according to Monterrey's closing sign, they were here for 26 years, which is no small run for a restaurant.
UPDATE 14 July 2016 -- The new apartments are coming along (actually this picture was taken in May, so they are well past this now):

This was my go to place when in college and living at the Commons apartments across the street. Good cheap Mexican food.

Sambo's has been discussed here before.
A readthrough of their Wiki page yields the following.
At one point they had 1,117 locations nationwide but the name drew controversy as people associated it as pejorative towards African-Americans. That coupled with other corporate issues the company had (despite utlizing different names in cities that were reluctant to let Sambo's open under that name) resulted in them folding up...except for the original location. If anyone has a craving for Sambo's they'd have to make the trek to Santa Barbara.
The other thing I read is that some locations sold to Denny's....which seems to be what happened here but I don't know f

Anything with the picture of or the story of Little Black Sambo, is right collectible now.. be that as it may or how it sounds now. But you have to remember when it was done..a different time. If I remember, the Sambo's menu's had the story of Sambo on the back. I'll have to check Ebay to see if there are any.

Ate at this Monterrey location many times over the years, and the quality of food & service was never better than mediocre...

As noted above, it was a good place to eat with friends when I was at USC. I remember one of them pointing out that it looked like an old Denny's. Didn't know Monterrey was there for so long. Hopefully, they'll be doing well at the new location.
Always loved to get the Monterrey Cheese Steak.

I though this started out as Sambo's, then Denny's.. but not sure.
